WHAT DOES TABULA OFFER?

Although the pepper was brought back from America in the 15th century, it was not until a century later that the monks of the Order of St. Jerome at the Yuste Monastery began to grow it extensively throughout northern Extremadura, the only area it is produced on the Peninsula.

 

The peculiarities of the production process, the ideal temperature and humidity levels in the region and the drying process give this product a series of distinguishing features.

Paprika from La Vera is reddish in colour, more stable than other types of paprika and a strong anti-oxidant, and it is used to preserve cured meats and other products.

 

It is also used as a condiment in cooking all sorts of meat and fish dishes.

 

From the different pepper varieties - Bola, Jaranda, Jeromín and Jariza - the 3 types of paprika flavours are made: sweet, bittersweet and spicy.
